SAUVIGNON BLANC

In the vineyard: Slavyantsi village, Bash Koliba vineyard
In the Cellar: The grapes were hand-picked at two different levels of ripeness, chilled, and gently crushed, then slowly fermented in stainless steel tanks at low temperature. After a short time on the lees the blend was assembled and bottled.

In the glass: The nose is delicately fragrant, displaying ripe grapefruit, fresh apples, and straw notes. The palate is rich with a touch of green grass and herbs. The restrained acidity of the taste is very well balanced leading to a long finish with pink grapefruit accent. Pairs naturally with seafood, green salads, and soft cheeses.

PINOT GRIS
2015
In the vineyard: Slavyantsi village, Bash Koliba vineyard
The grapes were hand-picked at optimum ripeness and sorted at vineyard and winery. The Bash Koliba vineyard is split into two parts: heavier soil adding weight to the wine, and lighter earth bringing delicate varietal aromas.
In the Cellar: The major part of the juice was tank-fermented at 14˚C - 16˚C with different yeasts to reveal the full spectrum of the varietal character.

In the glass: Vibrant acidity gives sleekness to the wine, on a backbone of yellow plums, orange peel and almonds. Smoky minerality complements the surprisingly full weight, while spices and pink grapefruit emerge out of the succulent, tangy finish. A perfect example of elegance backed up by substance.

ROSÉ PINOT NOIR
2016
In the vineyard: Slavyantsi village, Dermen vineyard
In the Cellar: The Pinot Noir grapes were harvested at optimum ripeness deliberately chosen for rosé production and cool-fermented in stainless steel tanks.

In the glass: Delicate and pretty in color, the wine shows floral strawberry and grapefruit peel aromas along with sour cherry and spice. Tight and elegant, with whetstone and lime flavors that slowly evolve on a zippy frame. The ginger and smoke notes linger into the long, flush finish.

CHARDONNAY
2014
In the vineyard: Slavyantsi village, Kush Balar vineyard
In the Cellar: Single vineyard Chardonnay, cooled down to 10˚C - 12˚C, and then crushed in stainless-steel tanks and cool fermented. A small part of the wine was aged in French oak barrels for a short time to add up depth and complexity.

In the glass: Finely focused aromas of citrus and pineapple. Soft fruity entry, with juicy peach, grapefruit peel, nectarine and smoke notes. The lengthy finish with crispy minerality makes it a great match for seafood.

MISKET
2016
In the vineyard: Chubra village, Sarahana and Yala Dere vineyards
In the Cellar: The grapes were cooled down to 10˚C - 12˚C, then crushed and pressed in stainless steel tanks. We take great care to preserve intact the gentle floral varietal flavors.

In the glass: Indigenous Bulgarian variety. White blossom, green apple, and citrus fruit notes. Finely structured with a mouthful of floral spice, straw and delicate smoke nuances. Great mineral finesse and crispy texture in the finish make it ideal for seafood.

SYRAH
2015
In the vineyard: Slavyantsi village, Oreshaka vineyard
In the Cellar: The grapes were hand-harvested, carefully sorted, and gently crushed in stainless-steel tanks for fermentation. Low-temperature maceration. After extended time on the skins to promote tannin evolution, a third of the wine was run off into French oak barriques. Aged for twelve months prior to blending.

In the glass: Lively with delicate freshness almost unbelievable for a Syrah. Beautifully balanced, reminiscent of ripe plum with vanilla lift, black pepper and tar. Red and dark fruits in the mouth supported by ultra-fine tannins. Superb minerality and earth notes echo in the long lively finish.

PINOT NOIR
2015
In the vineyard: Slavyantsi village, Dermen vineyard
In the Cellar: Fruit was harvested at optimum ripeness and fermented in stainless steel tanks. After a short period of post-fermentation maceration the wine was drained off the skins and 30% of the lot was aged in French barriques for 10 monthts.

In the glass: Firm and elegant. Wild violet and cherry notes with a hint of smoke and dried herbs. Ripe, medium body with fine tannins and spicy length, finishing with cherry fruit and delicate vanilla cedar.
